If classic AZ-Mex is a tug-of-war between Mexican and American culinary influences, Mexico has a tighter grasp on the rope at Comedor Guadalajara, a south Phoenix landmark opened by Magdaleno Sanchez in 1968. This is Sonora by way of Arizona — machaca, campechana and sizzling parillas, with cheese crisps and chimis thrown in for good measure.
